Glycine is a simple amino acid consisting of 20 members and is also known as aminoacetic acid. It has a basic as well as an acidic functional group in its molecular structure and acts as a strong electrolyte in aqueous solutions. It is highly soluble in polar solvents and insoluble in nonpolar solvents due to its basic nature. The amino acid has a high boiling and melting point. The pH level of the solution in which glycine is present regulates the form in which the molecule exists. Although not essential for the human body, glycine plays a critical role in different metabolic processes.

Other products like powder soup use around 2%, while food preserved with distiller's grains gets 1%. These flavors can add a distinct seafood taste to a sauce, making it more delicious.

Glycine is a versatile amino acid that can be utilized as a preservative in various food products such as surimi and peanut butter. It possesses antimicrobial properties, which can restrict the growth and proliferation of microorganisms like subtilis and Escherichia coli. To achieve the desired effect, an additional 1% to 2% of glycine is added to such food items.
Moreover, glycine also exhibits potent buffering properties owing to its amphoteric nature, which makes it an excellent flavor masker. For instance, when used along with salt, glycine reduces the saltiness, thereby influencing the perception of the overall flavor of the food. Similarly, when used with acid, it imparts a coarser and less acidic taste to the food product. For salt, the added percentage ranges from 0.3% to 0.7%, and for acid, it varies from 0.05% to 0.5%.
