In China, sodium metabisulfite is commonly used for the preservation and processing of light-colored vegetables such as lotus root, mushrooms, water chestnut, yam, and white asparagus. The addition of a sodium metabisulfite solution offers color protection during the preservation process. Each factory may have variations in their specific process, but for example, when processing canned mushrooms, fresh mushrooms may be soaked twice in an aqueous solution containing 0.03 g/kg sodium metabisulfite for 1-2 minutes each time.

Sodium metabisulfite finds extensive use in improving biscuit dough quality. Typically, it is added to the dough in a 20% solution form during the dough's immature stages. As the sulfur dioxide released during the dough preparation can lead to a decrease in the gluten strength, the addition of sodium metabisulfite ensures that the biscuits do not become excessively tough due to high gluten levels. The quantity of metabisulfite added varies according to the flour's gluten strength, with small amounts for stronger flours and none for high oil-to-sugar ratio dough types. This is because the sugar and oil themselves prevent the protein from swelling with water, preventing large gluten formations. Overall, biscuit quality and texture can be greatly improved with the addition of sodium metabisulfite.

 

Physicochemical properties

This substance is found in the form of white or slightly yellow crystals. It readily dissolves in water, yielding an acidic aqueous solution. Moreover, it exhibits solubility in glycerol and limited solubility in ethanol. When exposed to air, it undergoes oxidation, leading to the formation of sodium sulfate. This compound is sensitive to moisture and easily decomposes. Its melting point is recorded at 150 °C. When it comes into contact with strong acids, it undergoes chemical reaction, resulting in the production of sulfur dioxide and corresponding salts.
